Tuscan Chicken in Instant Pot–Tastefully Simple Style

Once again the Instant Pot Community on Facebook inspired me to try a recipe.  I’ve seen nothing by raves for this this recipe for Tuscan Chicken on This Old Gal’s site.  Seriously, if you have a pressure cooker, you need to be following her–she is the BOMB!  Of course I needed to adapt the recipe to Tastefully Simple ingredients.  I’m telling you–RUN to the store and buy the ingredients and make this TODAY!!  This is fantastic!

  1. I took 2 lbs of boneless, skinless chicken breasts and put them in a ziplock bag and then pounded them with my rolling pin to flatten them out to a uniform thickness and then sliced the bigger pieces into halves.wp-1474316985064.jpg
  2. I set the Instant Pot to SAUTE on the highest heat setting (you can change settings by selecting ADJUST after selecting SAUTE.)  While it was heating, I mixed together 2 Tbl of olive oil, 1 cap full of Tastefully Simple Garlic Garlic, and 1 cap full of Tastefully Simple Rustic Herb Seasoning and rubbed it into the chicken.
  3. I washed and dried a 5 oz package of spinach and set it aside.  I mixed 3/4 cup of heavy cream with 1 teaspoon of Tastefully Simple Seasoned Salt and set it aside.  I grated 1/2 cup of Parmesan Cheese and set it aside. I chopped 1/2 cup of sun dried tomatoes and I was all ready!

     

  4. When the magic pot said HOT, I added half the pieces of chicken and let them brown then turned them and browned the other side.  I took that half out and did the other half the same way.  When they were all done, I removed the chicken and poured in 1/2 cup chicken bone broth I made with my last whole chicken carcass last week.  I scraped the bottom of the pan to deglaze it.  I returned the chicken to the pot and pressed CANCEL.  Then I pressed MANUAL and used the +/- buttons to select 3 minutes of high pressure and closed the lid and set the valve to SEALED.  (Note, the chicken is not totally cooked at this point and that’s okay!  It finished cooking during the next steps.)wp-1474316985656.jpgwp-1474316985593.jpg
  5. When the pressure cycle was done, I carefully moved the valve to VENTING and let the pressure release then opened the lid.  I selected CANCEL and then SAUTE and added the cream and seasoned salt mixture.  I let it simmer for about 5 minutes, stirring frequently.wp-1474316985941.jpgwp-1474316986022.jpgwp-1474316986023.jpg
  6. After 5 minutes, I added the cheese, tomatoes and spinach and stirred until the spinach wilted.
  7. I served this with angel hair pasta because that is what I had on hand.  I think the next time I make it–which will be SOON–I will use bow tie pasta just because it holds the sauce a little better.
  8. Seriously–this is FANTASTIC!  Let me know if you try it what you think!

Tuscan Chicken in Instant Pot–Tastefully Simple Style

2   lbs boneless, skinless chicken breast, cut in half and pounded flat
2   Tbl Tastefully Simple Garlic Garlic
2   Tbl Tastefully Simple Rustic Herb Seasoning
2   Tbl olive oil
1/2 cup chicken broth
5   oz fresh leaf spinach
3/4 cup heavy cream
1   tea Tastefully Simple Seasoned Salt
1/2 cup Parmesan cheese, grated
1/2  cup sun-dried tomatoes, chopped

Set the Instant Pot to SAUTE on the highest heat setting (you can change settings by selecting ADJUST after selecting SAUTE.)  While it is heating, mix together 2 Tbl of olive oil, 1 cap full of Tastefully Simple Garlic Garlic, and 1 cap full of Tastefully Simple Rustic Herb Seasoning and rub it into the chicken. Wash and dry spinach and set it aside.  Mix heavy cream with 1 teaspoon of Tastefully Simple Seasoned Salt and set it aside.  Grate Parmesan Cheese and set it aside. Chop tomatoes.  When the magic pot says HOT,  brown the chicken. Remove the chicken and pour in chicken broth. Scrape the bottom of the pan to deglaze it.  Return the chicken to the pot and press CANCEL.  Press MANUAL and use the +/- buttons to select 3 minutes of high pressure and close the lid and set the valve to SEALED.  When the pressure cycle is done, carefully move the valve to VENTING and let the pressure release then open the lid. (Note, the chicken is not totally cooked at this point and that’s okay!  It finished cooking during the next steps.)  Select CANCEL and then SAUTE and add the cream and seasoned salt mixture.  Let it simmer for about 5 minutes, stirring frequently. After 5 minutes, add the cheese, tomatoes and spinach and stir until the spinach is wilted.  Serve over rice or pasta of your choice.
