Boneless Pork Chops with Fruit and Honeyed Carrots (full meal) in Instant Pot

This is my first experiment in a stacked meal and it turned out beautifully!  What’s a stacked meal?  It’s putting more than one dish into the Instant Pot at the same time.  This time I had the pork chops on the bottom and the honeyed carrots in a metal bowl on top of them.

  1. I seasoned the boneless pork chops with Tastefully Simple Italian Garlic Seasoning and Tastefully Simple Seasoned Salt.wp-1475504877023.jpgwp-1475504876546.jpg
  2. I selected SAUTE and made sure it was on the highest setting.  If yours isn’t on the highest, selected ADJUST after SAUTE until MORE is lighted.  When the display said HOT, I added 2 Tbl of vegetable oil.  When it was hot, I added the chops to the pan and browned them on both sides and removed them to a plate.

  4. I selected CANCEL and poured a cup of water into the hot pan and scraped off the browned bits.  I added 3 chopped apples, 1 cup of dried cranberries, 2 Tbl of sugar, 3/4 tea of curry powder and stirred until the sugar was dissolved.wp-1475504876549.jpgwp-1475504876912.jpg

  6. I put a pound of baby carrots into a metal bowl.  I drizzled 2 Tbl of honey over the carrots and put 2 Tbl of butter on top. I placed the metal bowl inside the magic pot on top of the pork chops.wp-1475505337621.jpg
  7. I selected MANUAL and then used the +/- buttons to change the time to 8 minutes.  When the pressure cycle was done, I allowed the pressure to release naturally.
  8. The carrots were nice and firm but no longer crunchy.  The pork chops and fruit were perfect. I gave the carrots a good stir to get the glaze on them.  I stirred the fruit mixture well and served it over the chops. Wonderful meal!wp-1475504877180.jpg

Boneless Pork Chops with Fruit and Honeyed Carrots

4 boneless pork chops
1 Tbl Tastefully Simple Italian Garlic Seasoning
1 Tbl Tastefully Simple Seasoned Salt
2 Tbl vegetable oil
3 sweet apples cubed
1 cup dried cranberries
2 Tbl sugar
¾ tea curry powder

1 pound carrots
2 Tbl honey
2 Tbl butter

Season the boneless pork chops with Tastefully Simple Italian Garlic Seasoning and Tastefully Simple Seasoned Salt.  Select SAUTE and make sure it is on the highest setting.  If it isn’t on the highest, selected ADJUST after SAUTE until MORE is lighted.  When the display says HOT, add vegetable oil.  When it was hot, add the chops to the pan and brown them on both sides and then remove them to a plate. Select CANCEL and pour a cup of water into the hot pan and scrap off the browned bits.  Add chopped apples, dried cranberries, sugar, and curry powder and stir until the sugar has dissolved. Addthe pork chops back into the pot. Place carrots into a metal bowl.  Drizzle honey over the carrots and put butter on top. Place the metal bowl inside the magic pot on top of the pork chops.  Select MANUAL and then use the +/- buttons to change the time to 8 minutes.  When the pressure cycle is done, allow the pressure to release naturally.  Stir the carrots well  to coat.  Remove the chops and stir the fruit well.  Serve chops topped with fruit mixture.
