I have had a food crush on O’Charley’s Gooey Caramel Pie since I tried my first bite a LONG time ago. Several years ago I discovered it was super simple to replicate at home. All it takes is 3 hours or so of boiling cans of sweetened condensed milk in a large pot of water, turning every 15 minutes or so. Ain’t nobody got time to watch a pot boil for hours! So, I didn’t make it very often. Along came the magic pot…. (you saw this coming, didn’t you?)
I took the labels off of 2 cans of sweetened condensed milk and put the trivet in the bottom of the Instant Pot . I laid the cans on their side on the trivet and covered them with water.
I closed the lid and made sure the vent was set to SEALING and then pressed MANUAL and then used the +/- buttons to select 25 minutes.
When the cycle was over, I let the pressure naturally released and I hit the CANCEL button to turn off the Keep Warm feature. When the pressure was gone, I lifted the cans out of the water and set them on my stovetop to cool completely.
Once the cans were cool, I opened them and scraped out the caramel into my stand mixture and gave it a good stirring. Then I poured the caramel into a prepared graham cracker pie crust.
I ground some pecans and chocolate chips in my retro nut grinder that I just LOVE and then sprinkled the top of the pie with the nuts and chips.
THAT’S IT! I served it with a dollop of whipped cream. It is SUPER creamy and SUPER yummy!
Gooey Caramel Pie
2 cans sweetened condensed milk (not evaporated milk)
1 graham cracker pie crust
1/4 cup ground or finely chopped pecans (optional)
1/4 cup ground or finely chopped chocolate chips (optional)
Remove labels and glue from the sides of the cans of sweetened condensed milk. Lay on their side on the trivet in the inner pot of the Instant Pot. Cover cans with water. Select MANUAL and use the +/- buttons to change time to 25 minutes. When pressure cycle ends, allow pressure to release naturally. Remove cans from water and allow to totally cool. Open cans and dump contents into a bowl and mix. Pour caramel into prepared pie crust. Top with nuts and chips. Store in refrigerator and top with whipped cream when serving.
