We are a bacon-loving family around here. Especially this time of year when we are enjoying wonderful home-grown tomatoes. Nothing goes with bacon as well as tomatoes, lettuce and mayo on toasted bread! We were talking about bacon at lunch the other day and I discovered not everyone knows about BAKING bacon. It is my favorite way of cooking it so I thought I would share. It couldn’t be easier.
Line a rimmed baking sheet with foil for easy cleanup and place a cooling rack on top. This isn’t strictly necessary but it makes the bacon less greasy and easier to retrieve when it is cooked. Spread bacon on the rack.
Put pan in a cold oven and set to bake at 400 degrees for 25-35 minutes, depending on how crispy you like your bacon.
