Bacon! Bacon! Bacon!

We are a bacon-loving family around here.  Especially this time of year when we are enjoying wonderful home-grown tomatoes.  Nothing goes with bacon as well as tomatoes, lettuce and mayo on toasted bread!  We were talking about bacon at lunch the other day and I discovered not everyone knows about BAKING bacon.  It is my favorite way of cooking it so I thought I would share.  It couldn’t be easier.

Line a rimmed baking sheet with foil for easy cleanup and place a cooling rack on top.  This isn’t strictly necessary but it makes the bacon less greasy and easier to retrieve when it is cooked.  Spread bacon on the rack. IMG_20170821_175524

Put pan in a cold oven and set to bake at 400 degrees for 25-35 minutes, depending on how crispy you like your bacon.
